How do I use a traditional Japanese tea set?
OK so I got a traditional (real) Japanese tea set.. It has this strainer thing and all this stuff I have never seen before… I need to know what ingredients I need to purchase to make the tea.. And know how to make it. Please help!
Green Tea when prepared correctly is a wonderful drink, full of subtle flavours and health-boosting catechin antioxidants.
There are three popular types of Japanese green tea, loose leaf tea, matcha Tea Powder and genmaicha brown rice tea.
LOOSE LEAF TEA
Loose tea teaves come is a variety of different types depending on how the tea leaves are grown and prepared.
Sencha
Sencha tea is a famous and popular tea due to the perfect balance of sweet and bitter flavours. This is one of the most common types of tea you will see when you drink green tea.
Hojicha
Hojicha tea is made using roasted tea leaves, giving it a mild taste with much less bitterness and a fantastic fragrance. This reddish-brown tea is very easy to drink.
Gyokuro
Gyokuro tea is an expensive type of tea which is grown in the shade of the sun to give it a naturally sweet aftertaste and soft aroma.
MATCHA TEA POWDER
Matcha is a type of Japanese green tea which has the leaf ground into a fine powder which is then mixed with hot water. This differs to normal tea where the leaves are only infused with the water, making matcha one of the healthiest, and most delicious types of tea available. It is also the tea of choice for the traditional Japanese tea ceremony, called sado, or chado in Japanese! Gyokuro tea leaves are often used to make matcha.
GENMAICHA BROWN RICE TEA
Genmaicha tea is green tea mixed with roasted brown rice. This fragrant, easy to drink tea is rich in vitamins and a great way to relax due to the lower caffeine content.

-= Making Green Tea with Tea Leaves =-
1. Put approximately 1.5 tablespoons of tea leaves in your tea pot, or in the filter cup if available.
2. Pour hot water into the tea cups to warm them.
3. Pour the same water back into the large tea pot to start brewing your tea. This water should not be boiling, but at approximately 70-80˚C.
4. Brew the tea for approximately 1 minute depending on tea type and taste.
5. Using the teapot, pour the brewed tea into the cups little by little to give an even flavour to both.
6. The same tea leaves can be used up to three times.
It is important to make sure that you use the correct temperature water for the different types of Japanese green teas that are available. 70-80˚C is perfect for sencha, but higher quality teas require lower temperatures and lower quality teas need higher temperatures.

-= Making Matcha Green Tea =-
1. First things first, put the kettle on and grab yourself a mug or if you want more authenticity, try using a chawan, a traditional Japanese tea cup.
2. Once the kettle has boiled, wait for a minute or two so that the temperature of the water is approximately 80°C. If the water is too hot, your tea may become too bitter.
3. Add a small teaspoon of matcha powder to your cup and then fill with approximately 60ml of hot water.
4. Using a chasen, or matcha whisk, mix the powder in with the water so that no lumps remain in the tea. Mix for a minute until the tea has lots of small bubbles on the surface and appears slightly frothy.
Your tea is now ready so sit down, relax and enjoy your green tea, perhaps with a small Japanese sweet on the side!

I would recommend that you find a good quality sencha loose leaf tea to start off with. This is the most popular type of tea in Japan, so you should be able to find it at a local food store, or there are many online shops that have some, including Amazon now.
No need to buy the most expensive one, but go for a mid range one so that you can appreciate how green tea should really taste. Once you have tried freshly prepared authentic Japanese green tea, those green tea teabags from big companies will never taste as good!
